Born in Los Angeles
Tatsu Ramen started on Sawtelle Blvd in LA’s Little Osaka — a neighborhood known for its deep roots in Japanese culture and food. It was here that the first bowl was served, the first line formed out the door, and the first late-night regulars found their spot.
The name “Tatsu” means “dragon” in Japanese — a symbol of strength, passion, and craftsmanship. That same spirit goes into every bowl we serve. From the very beginning, the goal was simple: make ramen with soul.

The Broth
At Tatsu Ramen, we believe that a great bowl of ramen starts with patience. Our broths are slow-cooked for hours using whole bones and vegetables — never from concentrate, never from powder.
The process takes time, and that is the point. There are no shortcuts to a broth that warms you from the inside out. Every pot is tended carefully, every batch made from scratch. That patience is what gives our ramen its soul.

Premium Ingredients
We source premium ingredients and craft every component in-house. Our signature Tatsu Egg is slow-marinated in soy sauce, giving it a rich, savory depth that pairs perfectly with every broth. Our noodles are made with a proprietary recipe designed specifically for our bowls.
When it came to gluten-free noodles, we did not settle. We tried 40 different GF noodles before choosing the best one — lab-tested and certified gluten-free. Our tofu is organic and non-GMO. Every ingredient earns its place in the bowl.
Late Night, Always
Some of the best bowls happen after midnight. That is why Tatsu Ramen keeps its doors open late — until 1 AM, 2 AM, even 3 AM depending on the location. Whether you are coming from a show, wrapping up a long shift, or just craving ramen at an hour when most kitchens are closed, we have got you.
